Hubert Chiron had the pleasure of meeting the new president of the Amicale Calvel Association in Japan, Mr Tajima, at the SIRHA International Hotel Catering and Food Trade Exhibition on 22-23 January. The Japanese branch of the Amicale Calvel Association was founded more than 30 years ago by Mr Prigent and Mr Bigot. Though both bodies are independent, they have built a strong community of shared values. With the support of Eriko Matsuura, the presidents of both associations discussed future relations between the two organisations, in particular how to promote an exchange programme for young bakers between the two countries. Mr Tajima took over from Pierre Prigent in 2015. He is a renowned artisan baker in the Land of the Rising Sun.
